Neils #3 - I wanted this batch of handcrafted spirit to speak for itself. To tell it's own flavour story as individual as the method used to create it. It's pure honest flavour, derived from attention to detail, slowly and artfully distilled.
When I began my distilling journey I was drawn to experiment with brewing methods in an effort to maintain the natural sweet flavours of the grains. I then learnt to use slow and careful distillation methods to capture the essence of the malt which resulted in a sweeter new make liquor that maintained the true malt character. This spirit was then rapidly aged in small format, clean skin American Oak casks so I could follow the aging process in a pure and unadulterated manner.
This expression is the third release and is lightly smoked with native hardwood used to smoke the malted barley.
Within this bottle I have crafted a dram that I hope you will enjoy sharing.
